This is a recipe for farmers market pasta salad. It’s called "farmers market" because it includes a lot of colorful ingredients you can find at the farmers market.
When you’re making a pasta salad, rather than just having celery or onions, you can really load it up with all kinds of great vegetables with a variety of nutrients, colors and flavors.
Starting with cooked rotini pasta tossed with a Parmesan viniagrette, add yellow peppers, green peppers, green zucchini, summer squash, celery, steamed corn, scallions and tomatoes. Toss in fresh peaches or your own favorite fruit in season and mix it all together.
The end result? Flavor, color, texture and nutrition.
