Keeping it simple through the holidays is what will help you stick to your healthy eating plan. Here’s a yummy salad that gives you a great source of fiber, protein, and even some sweetness that will satisfy your sweet tooth.
As always you can adjust the measurements because I don’t really measure.
Salad
2-3 cooked chicken breasts, cut into strips (I like to season my chicken with salt, pepper, oregano, and a brush of EVOO, then bake in the oven)
1 bag of fresh spinach
½ cup toasted pecans
¼ – 1/3 cup dried cranberries
Dressing
1/3 cup Extra Virgin Olive Oil
2 Tbsp Balsamic Vinegar
1 packet Truvia
1 tsp Dijon mustard
Makes 2-3 servings
