Breakfast is the most important meal of the day, so why do so many of us skip it? “Not enough time” is the biggest excuse I hear. Well here is an easy oatmeal recipe that will give you energy, is packed with protein, and most importantly, tastes great. Sure, you may need to wake up a few minutes earlier to fix it, but it’s well worth it. My son eats this almost every morning before school and it’s one of his favorites (although he is not a fan of the cottage cheese so we just skip that part). Give it a try and hopefully it will become one of your favorite breakfast options.
Mix oatmeal, protein powder, and Truvia in a bowl. Slowly add hot water, stirring oatmeal mixture. Let sit for a minute, then add yogurt or cottage cheese, berries and chia seeds or milled flax seeds. Enjoy with a cup of hot green tea if you like, or Eric enjoys his with a glass of milk!
