Grown Up Grilled Cheese!

Who doesn't love a great grilled cheese sandwich? I found a fabuous recipe - for adult grilled cheese. A word of caution: forget about carbs and the calories on this one. You just have to go for it and enjoy!

It's a recipe I found in my favorite chef's new book! Ina Garten's How Easy Is That cookbook. It's a great recipe for friends and family. Again, keep in mind, it's not for the diet conscious!
What's In There?

  • 12 slices of Applewood smoke thick cut bacon
  • 1 Cup Mayo
  • 1/4 Cup Dijon Mustard
  • 1/4 Cup freshly grated Parmesean cheese
  • 1 1/2 teaspoon salt
  • 1/2 t ground pepper
  • 1 loaf Sourdough bread
  • 6 Tablesoons salted butter (at room temp)
  • 6 oz. aged Gruyere cheese
  • 6 oz. extra sharp cheddar cheese

And Then What?
Heat oven to 400 degrees. Arrange bacon on a baking rack over a sheet pan. Roast for 20-30 minutes. Drain bacon and cut into one inch pieces.

Combine mayo, mustard, Parmesean, salt and pepper in a bowl. Lay 12 slices bread on a board and spread each one lightly with butter. Flip the slices and spread each generously with the mayo mixture.

Grate cheese in a food processor with the largest grating disk and combine.

Distribute bacon evenly on half of the slices of bread.

Pile 1/3 cup of grated cheese evenly on top of the bacon and top with remaining bread slices, sauce side down.

Heat electric pannini press and toast. Allow to cool for 2 minutes and serve.

(If you don't own a pannini press, just toast in a grill pan or skillet)

Serve with a mixed green salad and you have a perfectly grown-up summertime meal!
