Cheddar cheese spread
CHEDDAR CHEESE SPREAD
It's the most basic of all the spreads. It's good spread on crackers, in celery and great with apples. Try coring an apple and filling it with the spread. Refrigerate it to make sure the spread is nice and firm. Then slice the apple so you have a round apple slice.
16 ounces cottage cheese, lowfat, drained
6 ounces cheddar cheese, grated
1/4 teaspoon cayenne pepper
16 each green olives, seeded, with pimento
Place cottage cheese in food processor with steel blades and process until smooth. Blend in cheddar cheese until well incorporated. Add
olives and pulse until olives are chopped. Place in air-tight container and refrigerate at least one hour.
