House Works: Breakfast Burritos

They say that breakfast is the most important meal of the day. But often, this important meal is relegated to the back-burner, and busy families struggle to meet deadlines and get out the door.

In this House Works, Moms Everyday blogger, Alison Bickel, joins us with a recipe that is perfect for hectic households and yet guarantees everyone gets a good start to the day.

Breakfast Burritos

12 eggs, beaten
1/2 red pepper, chopped
3 green onions, chopped
1 cup shredded cheddar cheese
12 whole wheat tortillas
Wax paper, parchment paper or plastic wrap Large ziploc freezer bags

In a skillet, over medium high heat, scramble eggs. Just before eggs are finished, add in red pepper, green onions and cheese. Fold into eggs gently until cheese is melted. Take off heat. Divide scrambled eggs equally among 12 tortillas. Roll tortillas with the eggs, and wrap individually, using wax paper, parchment paper or plastic wrap. Place in large ziploc freezer bag and store in freezer.

Pull out individual burritos, as needed and warm in microwave for 1 minute.

Other options for burrito fillings could be 1 can of drained and rinsed pinto or black beans, breakfast sausage, bacon or jalapeño peppers.
