House Works: Key Lime Cake

When it's hot outside, you're always looking for ways to stay cool. And when it comes to food, you want something that's refreshing.

Key lime pie is always a favorite this time of year. But in this House Works, Chef Judy joins us in the kitchen at Schaefer's with a recipe for key lime cake! Moist, and easy to make, you'll fall in love with this tropical cake!

Key Lime Cake Pie

1 cup buttermilk
3 large eggs
1/4 cup lime juice, key lime
1 box yellow cake mix
1/2 cup lime curd
1/2 cup Greek Yogurt
2 cups Cool Whip Lite®
2 tablespoons lime zest
3 large egg whites
1/2 cup Agava

Mix eggs, buttermilk and key lime juice together. Mix in cake mix and put mixture into 2 pie pans that you have sprayed with non-stick spray. Bake in a 350 degree oven until done, about 20 minutes. Let cool.

Mix lime curd and greek yogurt together and spread on the cakes. Top with cool whip or Italian meringue.

Meringue:
Bring Agave to a simmer and simmer for 5 minutes. Beat egg whites until soft peaks form. Continue to beat and slowly add the agave. Spread on cake and top with lime zest.
