House Works: Leftover Turkey Recipe

Thanksgiving is not quite here yet, but you already know there's going to be plenty of leftovers. Everybody has them, but the question is, what to do with them that is both economical and satisfying.

In this House Works, we're in the kitchen with Chef Judy to find out how to use that leftover turkey.

Turkey Hash
Judy Gilliard
Servings: 6
1 tablespoon grapeseed oil
2 pounds potatoes, diced small
1 small red onion, diced small
1 pound cooked turkey, cut 1/2" thick
1/2 cup chopped parsley
1/2 cup chopped chives
salt and pepper to taste

In a large skillet, heat grapeseed oil to medium high heat. Add potatoes and onion and cook until almost tender. Add cubed turkey. Salt and pepper and continue to cook until potatoes are done and turkey is hot. Mix in parsley and chives and serve.
