Easy, Breezy, Caprese

Summer is coming and there's no better time to enjoy a nice and light salad! Caprese salad has been around for a very long time, and it's so easy there is no need for a formal recipe!

All you need is:

Tomatoes (organic heirloom taste the best!)
FRESH mozzarella
Fresh Basil
Cracked Pepper and Sea Salt
Olive Oil

Slice your tomatoes and cheese to about 1/4 inch and then just alternate them on the plate, using basil leaves in between, then drizzle with olive oil, and give it a grinding of salt and pepper, that’s all there is too it. This can be done with cherry tomatoes and square mozzarella as well there are so many variations but the tastes are the same and its a nice light salad. You can even go further and add some heat with some red pepper flakes if you like it. The best Caprese I’ve had was from Fabulous Catering in Minneapolis, MN; the olive oil was infused with jalapeno!
