Strawberry Frozen Yogurt

Well, day one of summer vacation came and went uneventfully. We moved a bit slower in the morning, made pancakes and eased ourselves into the day. I’m always a bit uncertain of how things will go during these first few days of togetherness. Usually, there’s a little more bickering as we settle into the days of summer, being home and around each other a bit more. Everyone kept themselves pleasantly busy, moving in and out of the house moving from soccer play, to bike riding, to digging with small trucks in the backyard, pausing for a break in the afternoon for a bowl of frozen yogurt.

It was a good day.

I haven’t tried making this frozen yogurt recipe with any other fruit (or fruit combination), but am anxious to try. Can you imagine it with fresh peaches or raspberries?

Strawberry Frozen Yogurt

2 cups whole milk Greek yogurt
1 cup strawberries, hulled and sliced
1/2 cup maple syrup

In a medium bowl stir together yogurt and maple syrup. Gently fold in strawberries. Place yogurt mixture in ice cream maker. Freeze according to ice cream maker’s instructions, approximately 20-25 minutes. Serve immediately for a thick, soft serve yogurt or place in freezer to further harden.
