House Works: Baby Zucchini

You can certainly say that most babies are really cute. But can you say the same for baby zucchini? Perhaps. They are not only cute little vegetables, but they are tasty and good for you, too. So in this House Works, Chef Judy shows us how to cook them up for your next meal.

Roasted Baby Zucchini

You can make as much as you would like with this recipe. Figure 3 baby zucchinis per person.

Cut baby zucchini in half, length-wise. Place on a baking sheet and drizzle with melted *coconut oil. Sprinkle with lemon pepper and roast in a 425 degree oven for 8 minutes. *You could also use grape seed oil or canola oil.

Zucchini Gratin
Serves 4

2 medium zucchini cut on the bias, place in gratin dish.

Top with bread crumb mixture and back in a 400 degree oven for 20 minutes.

Bread crumb mixture:
Place 2 slices of whole wheat bread cubed in the food processor or blender, 4 oz. of Swiss cheese, 1/2 teaspoon sea salt, 1/2 teaspoon black pepper. Pulse until it forms crumbs. Place is a bowl and toss with 1 tablespoon olive oil.
