House Works: Super Bowl Chili

As most of you know, the Super Bowl is coming up. And what's a Super Bowl party without some fabulous food?

Chili is often a popular food choice at Super Bowl parties. So, in this House Works, Chef Judy shows us how to prepare a white chili that your guests will score a touchdown!

Fast White Chili

Servings: 10
2 teaspoons vegetable oil
2 teaspoons vegetable oil
2 each clove garlic
1 large onion, chopped
1 pound ground chicken, or ground pork
1 cup low sodium chicken broth
10 cups great northern beans, canned, rinsed and drained
10 ounces canned green chilies, diced
1 teaspoon dried oregano, crumbled
1 teaspoon dried chili flakes
1/4 tablespoon dried cilantro, crumbled
10 ounces monterey jack cheese, shredded (optional)

Heat oil in a large skillet and cook onions and garlic until soft. Add ground chicken or pork and cook until browned on medium high heat. Add chicken broth and stir getting all the brown bits off the skillet.

Add remaining ingredients, except cheese to beans. Cover and simmer 30 minutes. Sprinkle 1/2 oz cheese over each portion as it is served.
