Sneaking in the Veggies

I know I’m not alone when I say it’s not easy to get kids to eat vegetables. It’s not easy to get me to eat veggies, so I can’t say I blame them.

But unlike my daughter, I’m able to understand why vegetables are good for me and I power through and eat them. In an effort to make sure my girl gets all her vitamins, I puree my vegetables and mix them in with other things I know she’ll eat.

Eggs get some pureed broccoli, mac and cheese gets pureed cauliflower and my latest discovery is in the form of dessert! This may not be news to anyone, but it was a revelation for me. If you put berries, juice and pureed veggies in a blender they become a very healthy popsicle when frozen. You can even use water instead of juice to keep the sugar down.

Now that the weather is warm, this cool sweet treat is a great bargaining tool. My daughter will do pretty much anything for a popsicle. Little does she know, it’s chalk full of vitamins and veggies!
