Susan's Mom's California Chili Rellenos Casserole

Ingredients

1 pound ground beef
1/2 cup chopped onions
2- ( 4 oz) cans of whole green chilies (drained)
6 oz sharp cheddar cheese (shredded) (1 and 1/2 cups)
1 and 1/2 cups milk
4 beaten eggs
1/4 cup flour
1/2 tsp salt
several dashes of bottled hot pepper sauce
1/4 tsp. pepper

Directions

Brown the beef and the onion. Drain off the fat. Sprinkle meat with 1/2 tsp salt and 1/4 tsp pepper.

Halve the chilies lengthwise and remove the seeds. Place half the chilies in a 10x6x1 and 1/2 inch baking dish.

Sprinkle with cheese. Top with the meat mixture. Arrange the remaining chilies over the meat.

Combine remaining ingredients. Beat till smooth. Pour over the chilies.

Bake in moderate oven at 350 degrees for 45 to 50 minutes (until a knife inserted comes out clean). Cool five minutes before serving. Makes 6 servings.
