BARS
1 cup all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs
1 1/2 cups sugar
1/2 cup firmly packed brown sugar
1 cup oil
1 (16-oz.) can pumpkin
1/2 cup chopped nuts (optional)
1 (6-oz.) pkg. dried fruit bits OR 1 cup mini chocolate chips (optional)
FROSTING
2 cups powdered sugar
1/3 cup margarine or butter, softened
1 tablespoon milk
1 teaspoon vanilla
DIRECTIONS:
Heat oven to 350 degrees F. Grease and flour 15x10x1-inch baking pan. Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, baking powder, pie spice, baking soda and salt; mix well. In a large bowl, beat eggs. Add sugar, brown sugar, oil and pumpkin; blend until smooth. Add flour mixture; mix thoroughly. Stir in nuts and fruit bits/chocolate chips. Pour into greased and floured pan.
Bake at 350 degrees F. for 30 to 40 minutes or until a toothpick inserted in center comes out clean. Cool.
In a small bowl, combine all frosting ingredients; beat until smooth. Spread over cooled bars. Cut into bars. Store in refrigerator.
COOKS NOTE: You can use cream cheese frosting from the store if you don't have enough time to make your own!
