Sooo…..have you ever had one of those weeks? Where you have it all planned out…workouts, meals, blog posts? Then one child gets sick, then another and another. All plans go out the window, and you spend that well planned week making soup, monitoring fevers and watching endless movies snuggled up on the sofa. Well, that would pretty much sum up the first part of January for us. At the end of that week full of sickness, my youngest boy had a birthday. He requested a chocolate layer cake with ‘fluffy, chocolate frosting’. His request included making the cake, as he saw his brother do last spring. Of course, I planned to photograph and share it here with all of you. After a week of fevers, none of that happened.
What did happen was me, making the cake, the night before his birthday.
This is where I need to confess that although I love to bake, I am not a layered cake, pretty frosting kind of baker.
That said, after baking, I went to remove the layers (that had been properly greased, floured and cooled) only to have one of the layers break in half coming out of the pan. Perfect. As I’m scrambling to put it back together I feel the birthday boy watching me. Avoiding his gaze, I continue to work, frosting the cake, happy to find that it’s a great adhesive for broken cake layers. All the while my baking assistant is chattering away next to me, licking frosting from the beater. My frosting job is less than stellar, given the fact that I’m using it more as a device to hold the broken layer together than to decorate the cake.
Upon putting the final touches on what has turned into a cake/frosting/engineering feat, I look down at my boy’s face, fingers crossed that he is not disappointed. As he looks at the cake, a wide smile spreads across his freckled face. He happily exclaims, ‘Mom, this is the best birthday cake, EVER!’
I used The Best Chocolate Cake recipe from Amanda over on I am Baker. It was incredibly moist and flavorful. If you are looking for a great chocolate cake recipe, this is definitely one to use. The ‘fluffy’ frosting my son requested was a chocolate whipped cream frosting. It was the perfect, light way to top off the layers of chocolate it covered…err…held together.
