Omelet, anyone?

What's for dinner at your house tonight? I'm having omelets! Not just your average run-of-the-mill omelet! A satisfying, tasty omelet that won't leave you hungry!

Bought a piece of smoked salmon at the grocery store. Smoked salmon goes well with Brie cheese. I have that already in my fridge . Just add some salt and pepper to my beaten (2) eggs. Serve it up with a mixed green salad and voila - dinner tonight!

Omelets are a great alternative to a meat and potatoes dinner. Sometimes a nice change!

Other combinations that work well for a hearty omelet: a ham and cheese omelet. I usually have turkey and ham deli meat slices that I can throw into an omelet and whatever cheese I have on hand, from mozzarella to Colby jack to gruyere. I normally use a store-bought shredded cheese or shred my own from a block.

Some tips to making a good omelet:

  • Beat your eggs until they're fluffy and have a lot of air in them. I will either use a splash of water or one percent milk
  • Butter in the pan is a must when cooking-up my omelets. When the butter starts to hiss, I know it's time to put my egg in!
  • Also, it's helpful if you put the cheese on one side of the omelet and the other ingredients down the center. Makes it easier to fold the omelet

Omelets don't have to be boring. Try one with bell peppers, pepper jack cheese and some lump crab meat. Another favorite of mine? An omelet with cooked, crumbled bacon, blue cheese crumbles and diced apples! Yum! That's what's for dinner tonight!
