Dinner Tonight - Nacho Mac 'n' Cheese

We are making Nacho Mac 'n' Cheese on this week's "Dinner Tonight." Watch some simple steps to an amazing dinner for your family.

Utensils Needed
1 large Dutch oven
1 large sauce pan
Measuring cups/spoons
Stirring utensil

Ingredients

  • 2 cups whole wheat rotini (or another fun whole wheat pasta)

  • 1 pound extra lean ground beef

  • 2 cups chopped sweet red peppers

  • 1/4 cup reduced-fat stick margarine

  • 1/4 cup all-purpose flour

  • 1 envelope taco seasoning

  • 1/4 teaspoon black pepper

  • 2 1/4 cups fat-free milk

  • 4 ounces reduced fat shredded cheddar cheese

  • 4 ounces shredded cheddar cheese

  • 1 cup frozen corn, thawed

  • 1 cup coarsely crushed whole grain tortilla chips

Directions

  1. Cook rotini according to package directions.

  2. Meanwhile in a Dutch oven, cook beef and red peppers over medium heat until meat is no longer pink.

  3. Stir in margarine, flour, taco seasoning and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat. Stir in cheese and corn until cheese is melted.
  4. Drain rotini; add beef mixture and stir to coat. Sprinkle with tortilla chips.
