Dinner Tonight - Slow Cooker Chicken Stew

We are making Slow Cooker Chicken Stew on this week's "Dinner Tonight." We have some simple steps to an amazing dinner for your family.

Utensils Needed
Slow cooker
Can opener
Small bowl
Mixing spoon
Knife/cutting board
Measuring cups/spoons


  • Vegetable oil cooking spray

  • 2-3 boneless, skinless chicken breasts

  • 1/4 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 cup fat-free, low-sodium chicken broth

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon fresh, minced garlic

  • 1 medium onion, chopped

  • 1 large russet potato

  • 3-4 carrots, chopped


  1. Lightly spray the slow cooker with cooking spray.

  2. Lay the chicken breasts on the bottom of slow cooker and add salt, pepper and chicken broth.

  3. In a small bowl, mix balsamic vinegar and garlic; set aside.

  4. Add onion, potato and carrots to the slow cooker.

  5. Pour balsamic vinegar mixture on top and cook on low for 6-8 hours or until it reaches an internal temperature of 165 degrees.
