Thanks to her Greek heritage, Peggy Kotsopoulos’s passion for food was pre-ordained. Life always revolved around meals, and she had a precocious grasp of the way certain foods made her feel. Even as a five-year-old, she recalls that eating a burger made her sluggish and lethargic at playtime while a pint of strawberries “made her face tingle” and filled her with energy. That food-feeling link took on new meaning when, at age fifteen, Kotsopoulos was hit by a speeding car. Though doctors didn’t expect her to survive, she was discharged less than three weeks later and dubbed a “miracle child.” She fought her way back to health by nourishing her body and soul with the right foods, and years later left a successful investment career to make the nutrition-vitality connection her life’s work.
