Orzo and Herb Salad

Now's the time to start planting your own herb garden and here's a recipe that features some wonderful herbs you can grow at home.

Ingredients

Dressing

½ clove garlic, minced
2 tablespoons lemon juice
¼ cup flat leaf parsley
2 teaspoons oregano
Black pepper
¼ cup olive oil

Salad

1 cup baby greens
1/3 cup feta cheese
1 medium tomato diced
3 scallions
1/2 cup parsley
1/4 cup basil



Directions

Dressing

Combine all ingredients and mix well. Prepare ¾ cup uncooked orzo according to package directions. Drain and cool slightly. Toss cooked orzo with dressing.

Salad

Combine orzo and dressing mixture with salad. Let sit at least 10 minutes to blend flavors. Serves 6.


*For a more complete meal add cooled grilled chicken.
