This is another one of my family’s favorites that is much easier to make than regular lasagna. I got it out of Kraft’s Food and Family Magazine but just modified it a bit.
This soup is a twist on my favorite Minestrone Soup recipe, served with some crusty bread and a side salad it is a wonderful meal to warm up to on a cold day.

These are such simple things to make and you can use whatever you have on hand and can customize them to your fit your family's taste. Before you get started, check out your refrigerator for leftovers. Get the kids involved by letting them customize their muffin.
It seems that a popular method of cooking basically any garden veggie is to toss it in extra virgin olive oil, salt, pepper and misc. seasonings. The same is true of cherry tomatoes evidently, but with a slow roasting alteration.
Pesto. There are so many different ways to enjoy it. Personally, parsley pesto is my favorite, with basil a close second. I especially love to freeze pesto and pull it out in the months long after the herbs in my garden are done for the season. It can be used in sauces, soups and as a topping for pizza. The color isn’t quite the vibrant green you’re used to with freshly made pesto, it turns a bit darker, but the flavor is just as delicious.
My mom has always been a creative cook. The most memorable dish she ever made was dubbed Toxic Zucchini by me and my sister. It tasted great, it just didn't present well the first time she made it. Curious? Here's the recipe:
