This is a favorite of mine, it is an Italian style dish, and makes a great in between meal snack or an appetizer for your main entree. Although very simple to make, it is packed with fresh flavors of the garden.
Not only is this a great way to get your daily intake of dairy, vegetables and greens, but it is healthy for you too. As parents, we don't always have a lot of time to make healthy snacks and at times find it easier to grab a bag of cookies for ourselves or our young ones. With this recipe it only takes 2 to 3 minutes because it is a simple dish without much clean up, and the kids can make it too.

2 large tomatoes
12 oz. fresh mozzarella cheese
2 oz fresh basil
1 to 2 tablespoons balsamic vinegar
Ground black pepper to taste
Salt to taste
Slice the tomatoes and mozzarella cheese . Alternate slices of each around a plate with tomatoes first then the cheese on top of the tomatoes, then lay a piece of fresh basil on top of the cheese. Drizzle with balsamic vinegar. Salt and pepper to taste.
