Sunblock Salad

How can a trip to the farmer's market keep you from getting a sunburn? One clue: it involves tomatoes.

We always knew that fruits and veggies were good for us, but thanks to new research, we now know that some can even protect our skin from harmful UV rays. The tomato, a summer favorite, can protect our skin thanks to its abundance of an antioxidant called lycopene.

We have a recipe for an easy, GREEN Sunblock Salad, otherwise known as a traditional Greek salad.

Ingredients:

1 medium tomato, cut into chunks
1/2 cucumber, peeled, de-seeded and chopped
1 green pepper, sliced
1 red onion, thinly sliced

Directions:

Mix everything in a bowl and toss together with Greek dressing.
