Recipes from Mayo Clinic Weight Management

Crunch Broccoli Salad

1 large bunch of fresh broccoli, cut into bite-sized pieces                           
1 small red onion, sliced thin
1 tablespoons bacon bits
1/2 cup raisins
1/2 cup chopped walnuts
3/4 cup Jimmy's nonfat coleslaw dressing

Combine broccoli, onion, bacon bits, raisins and walnuts in a salad bowl.
These ingredients will keep in the refrigerator for up to four days (covered).
Add dressing just before serving. Toss and serve. Makes eight 1 cup servings.

(160 calories per cup)

Quick Caramel Dip

1 package sugar-free instant butterscotch pudding                              
1 package dry mix whipped topping
1 1/2 cups skim milk

Mix together and chill.

(10 calories per tablespoon)

Ginger-Topped Apple Pie

6 to 8 baking apples, cored and sliced (leave peels on)                                 
1/2 cup Splenda
1/2 cup oatmeal
1 teaspoon cinnamon
Juice of 1/2 lemon
1/4 cup water
1/2 cup crushed gingerbread cookies or low-fat granola

Preheat oven to 375 degrees. Mix together apples, Splenda, oatmeal, cinnamon, lemon juice
and water. Place in deep dish pie pan. Top with crushed gingerbread cookies, cover with foil
and bake until apples are bubbly, about 50 minutes. Remove foil and bake for 10 more minutes.
Serves 10. 

Best baking apples include Gala, Pippin, Fuji, Cameo, Granny Smith, Golden Delicious and Rome.  

(Per cup: 107 calories; 1.5g fat; 0g saturated fat; 0mg cholesterol; 23mg sodium;
24g carbohydrates; 3.5g fiber; 1g protein.)
