We covered pizza last time you were on the show. Tell us a little about your raw bar.
At Backyard we take great pride in how fresh our food is.. and being a raw bar means we specialize in raw seafood, so it has to be fresh.
Being in West Virginia how in the hay do you get seafood that fresh!
We have to special order and get fresh seafood in 3 times a week Monday, Wednesday and Friday. The oysters we serve come in within a 3-5 day window from the day they were harvested. So we don't always know exactly what we are getting but they know our standards.
So what have you brought us today?
We like to combine different styles of cuisine which creates a unique fusion of different tastes. Today we brought some ceviche. It is of South American origin. We take raw scallops and tiger shrimp cut into chunks then let soak in fresh squeezed lemon, lime and orange. This method cures the raw seafood were the acid from the citrus actually cooks the protein. Throw in some fresh avocado, cilantro, onion, tomato, red bell peppers, little jalapeno for some kick then salt and pepper.
Back to the oysters. We know you serve them raw. Are they prepared any other way?
Yes! One of our most popular is the Oyster Rockefeller. (We demonstrate how to shuck the oyster). Topped with Sherry Beur Blanc, shaved parmigiano reggiano, sauteed spinach, seasoned bread crumbs and smoked applewood bacon. Then placed in our wood fire oven.
So there's some buzz going around about a new venture that's soon to open next door.
That is true! "The Peddler" will be a new restaurant next to Backyard. We will be featuring specialty grass fed organic burgers on homemade brioche buns. Also duck fat fries, a healthier option and delicious, along with gourmet grilled cheeses and milkshakes.
