Mother's Day meal under $10 - Bacon, egg & cheese strata
8 bread slices, cut in cubes
8 slices cooked bacon, crumbled
1 1/2 cups shredded cheddar
2 cups milk
3/4 teaspoon Dijon mustard
salt and pepper
*Salsa for garnish if desired
Here's a perfect dish for the kids (and maybe a bit of help from an adult) to put together for a fabulous Mother’s Day breakfast in bed or brunch.
In a large bowl, toss cubed bread with bacon and cheese. Pour in 9×13 buttered baking dish. In another bowl, whisk eggs, milk, Dijon mustard and a pinch of salt and pepper until smooth. Pour egg mixture over cubed bread mix. Cover and refrigerate overnight.
To bake; Preheat oven to 350 degrees and cook for 1 hour, until golden brown and set in the middle. Let sit 5 minutes before serving. Garnish with salsa if desired.
