Egg Avocado & Salsa Breakfast Bowl


2-3 eggs
Half of an avocado
A handful or two of salad greens---baby romaine, spinach, kale, arugula
Fresh Pico de Gallo or your favorite salsa
Coarse sea salt and freshly ground black pepper


1. In a skillet, cook your eggs to preference--scrambled, over easy, fried, poached

2. In the bottom of a medium sized salad bowl, layer salad greens and avocado.

3. Top with eggs and salsa or pico.

4. Season to preference with coarse sea salt and freshly ground pepper.
