Whole Wheat Chocolate Chip Cookies


1 1/2 sticks butter
1 1/2 cup brown sugar
1 cup granulated sugar
1 1/2 teaspoon vanilla extract
3 eggs or equivalent using Ener-G egg replacement
3 cups whole wheat pastry flour
1/2 teaspoon salt
1 1/2 teaspoon baking soda
1 1/2 cup chopped pecans (optional)
3 cups chocolate chips, milk chocolate or semi-sweet


Preheat oven to 375 degrees. Combine butter, sugar and brown sugar, beat until creamy. Add eggs and vanilla. In a separate bowl combine dry ingredients. Gradually add to wet mixture until well combined. Add in chocolate chips and pecans. Drop by tablespoon onto ungreased cookie sheet. Bake 8-10 minutes at 375 degrees. Allow to stand 2 minutes before removing from baking sheet. Cool completely.
