Lime & white chocolate chewy cookies


Adapted from My Baking Addiction

2 3/4 c all purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 c softened unsalted butter
1 1/2 c white sugar
1 egg
1/2 tsp vanilla
3 T lime juice
Zest of one lime, minced (about 1 tsp)
1/2 c white chocolate chips
1/4 c sugar on a pie plate for rolling the cookies


Preheat oven to 350 degrees. Line cookie sheets with parchment paper

In a small bowl, whisk together flour, baking powder, baking soda and salt.

In a large bowl, using a mixer beat together the butter and sugar until smooth and fluffy.

Beat in egg, vanilla, lime juice and lime zest. Gradually add flour mixture and then white chocolate chips.

Roll rounded tablespoons of dough into balls in the palm of your hand and roll to coat in sugar. Space about 1" apart on cookie sheets.

Bake 10-12 minutes until lightly browned. Leave on cookie sheet for two minutes before transferring to a wire rack to cool completely. Store in airtight container.
