  • 1 c pumpkin from a can
  • 2 T maple syrup
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 c rolled oats
  • 1/2 tsp salt
  • 1 tsp pumpkin spice (cinnamon is great too)
  • 1 tsp baking powder
  • 2 ripe bananas
  • 2 T Pepitas (optional)


Preheat oven to 375 degrees. Coat the inside of an 8"x 8" baking dish with butter or vegetable oil.

In a food processor blend together the pumpkin, egg, vanilla and bananas until combined.

In a medium sized bowl, mix together the oats, baking powder, pumpkin spice or cinnamon if using and salt. Stir in pumpkin mixture and transfer to baking dish. Top with Pepitas if using. Bake for 25 minutes until the edges get brown. Let coo; in pan for 10 minutes. Cut into 9 pieces and serve with maple syrup or a dollop of yogurt topped with syrup.
