Smashed sweet potato spread


  • 1 c roasted sweet potato, mashed
  • 3/4 c chickpeas cooked or rinsed and drained from a can
  • 1/2 tsp cayenne pepper
  • 1 T chopped pistachios
  • Olive Oil

Blend sweet potatoes, chickpeas and cayenne pepper together adding olive oil as necessary to achieve a smooth consistency. Top with chopped pistachios and avocado.
