Kid food, mom food, happy diet food

Moms often have hungry kids to feed and hungry diets to deal with. Here are a few ideas to satisfy both without becoming a short order cook.

Healthy Sloppy Joes

Starting with 1.5 pounds of browned, unseasoned turkey, add a little ketchup - just enough to coat it and mix it up. Add a small amount of A1 sauce and barbecue sauce to add some tangy flavor. Toss in a little relish for a touch of crunch.

Shaved Zucchini Salad

Romaine lettuce
1 zucchini
1 lemon
2 Tbsp. olive oil
Salt & pepper to taste

Using a spiral slicer, turn a zucchini into pasta ribbons. Place the spiraled zucchini on top of a bed of lettuce along with a few zucchini slices. Garnish the salad with a little salt, pepper and lemon juice.

Veggie Kabobs

Prepare your favorite vegetables on skewers - just as you would a regular shish kabob. In place of meat, add small sections of corn on the cob. Drizzle with olive oil, salt and pepper. Cook on the grill for 1-3 minutes on each side.

Chocolate Fruit Dip

1/2 cup plain Greek yogurt
3 Tbsp. cocoa powder
1 tsp. Stevia
1/2 tsp. vanilla extract
Fresh fruit for dipping

Mix together yogurt, cocoa, Stevia and vanilla. Serve with your favorite in-season fruit for dipping.
