Blue cheese and spinach burgers

Here's a dinner idea that gets veggies into your child's diet, it also stretches a pound of hamburger a little further.



  • 1 lb of ground beef
  • 1 lb ground turkey
  • 1 carton mushrooms, chopped
  • 1-4oz container of crumbled blue cheese
  • 2 eggs
  • Two heaping handfuls raw spinach (1-2 cups)

Be sure to chop mushrooms and spinach pretty fine add this with all other ingredients including egg-add a dash of salt, pepper, oregano and parsley – mix well with your hands (be sure egg is mixed well for keeping burgers held together). Patty up into burgers season both sides of patties with a little season all or salt and pepper. Grill to your liking!!!!

Parmesan Veggies


  • 4 large carrots, sliced
  • 2 cups Brussels sprouts, chopped
  • 2 cups raw green beans
  • 1 medium butternut squash, diced
  • 1/2 cup fresh Parmesan cheese, shredded
  • salt and pepper to taste
  • onion and garlic powder to taste*

Lay vegetables all out on baking sheet covered with parchment paper. Top with olive oil until all is lightly coated. Sprinkle about 1/2 cup (more or less depending on preference) of fresh shredded Parmesan cheese, salt, pepper and onion and garlic powder. Toss around with hands gently to make sure all are coated. Bake at 425 for about 30 minutes or until tender and golden!

*Note: I use POWDERS instead of SALTS for less sodium
