Oatmeal chocolate chip peanut butter bars


  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat pastry flour
  • 1/2 cup old fashion oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon coarse sea salt
  • 1 cup semisweet or milk chocolate chips


1. Preheat oven to 350 degrees.

2. In a large bowl, cream the butter, sugars and peanut butter until light and fluffy.

3. Beat in egg and vanilla extract.

4. In a small bowl, combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well.

5. Add chocolate chips.

6. Spread into a greased 13-in. x 9-in. baking pan. Batter is very thick, like cookie dough.

7. Bake at 350° for 20-25 minutes or until lightly browned.
