Smashed sweet potato spread
- 1 c roasted sweet potato, mashed
- 3/4 c chickpeas cooked or rinsed and drained from a can
- 1/2 tsp cayenne pepper
- 1 T chopped pistachios
- Olive Oil

Blend sweet potatoes, chickpeas and cayenne pepper together adding olive oil as necessary to achieve a smooth consistency. Top with chopped pistachios and avocado.
